Sun dried courgettes preserve is a Traditional Agricultural Food Product (PAT) of Puglia, prepared throughout the whole region.
Its period of production/processing is during summer when courgettes grow abundant. They have a white colour with greenish reflections and a distinctive flavour.
For the preparation of this preserve the courgettes are first washed, cut lengthwise, salted and allowed to dry under the sun until they reach a humidity of 30-35%. Before sunset they must be stored in a cool, dry place to prevent moisture.
Once ready, they are quickly soaked in vinegar, dried and placed in airtight glass containers.
Sun dried courgettes can be eaten by wetting them with a bit of water. They can be used to prepare meals, or as a side dish.
