The traditionally prepared tomato sauce preserve is a Traditional Agricultural Food Product (PAT) of Puglia, prepared throughout the whole region.
For the preparation of this typical product the tomatoes known as the "Fiaschetto" are used, as they are more suitable for the preparation of this tasty sauce.
The sauce has a deep red colour and can be used for the preparation of many dishes.
For the preparation of this sauce the best Fiaschetto tomatoes should carefully selected, eliminating those too mature or rotten.
They need to be washed well, cut and cooked over a fire. After cooked they are passed through a special machine.
The sauce is then poured into bottles which are then hermetically sealed and sterilized in large containers by boiling for at least 20 minutes.
The tomato sauce preserve can be used for the preparation of meat sauces and for pizzas.
