Sun dried wild mushrooms

Sun dried wild mushrooms are a Traditional Agricultural Food Product (PAT) of Puglia region.
Mushrooms used to make this preserve are picked up in the woods scattered in the various territories of Puglia. They are therefore of various types and very tasty.
For the preparation of this preserve mushrooms, once picked up, are cleaned, washed and cut lengthwise.
They are then salted and left to dry in the sun until they reach a low moisture content.
They are then moistened in vinegar for a few seconds, dried and stored in glass containers.
This sun dried wild mushrooms can be used for the preparation of risotto, but also to give flavour to sauces or to top pizza and focaccia.
