Peppers in olive oil preserve is prepared with peppers grown and produced by local farmers.
Preparation is done in summer using only high quality peppers. They must be fresh, firm and with no stains on the surface.
For their preparation peppers must be carefully chosen, washed, cut lengthwise and cleaned of seeds.
They are then cooked in vinegar and allowed to dry. They are arranged in airtight glass jars with herbs such as parsley and garlic, and covered with extra virgin olive oil.
Peppers in olive oil are perfect as an appetizer or as a side dish with meat or as filling for panini.
