Asparagus in olive oil (Asparagi in olio di oliva) are a Traditional Agricultural Food Product (PAT) of Puglia. They are prepared using both wild asparagus, which grow in the rural territory of the whole region, and cultivated asparagus.
They are usually prepared in May when they are ready to be picked up. For a high quality product asparagus must be collected, processed and packaged in the same day. They are an home-made product with no added preservatives.
The pickled asparagus in olive oil retain their tasty and tender quality characteristic.
For the preparation of this preserve asparagus are first cleaned and washed, and if necessary, cut in pieces.
They are then cooked in vinegar and, once ready, allowed to dry.
They are carefully arranged in hermetically sealed glass jars with some garlic and parsley and covered with extra virgin olive oil.
They can be consumed after a few months.
The asparagus in olive oil are excellent both as an appetizer or as a side dish.
