Artichokes in oil are one of the most typical products of Puglia and a Traditional Agricultural Food Product (PAT) of the region.
The plants of the artichokes are quite common in the territories of Puglia. Here, two varieties can be found: one with thorns and the other, called 'Inerme', without thorns.
For their preparation the artichokes, once washed and cleaned of the outside part, are cut into pieces and boiled in vinegar.
Once cooked, they are allowed to dry and then inserted in glass containers with some garlic and parsley.
They are then covered with extra virgin olive oil.
Artichokes in oil can be eaten as an appetizer or as a side dish.
