Lasagne arrotolate

Lasagne arrotolate (rolled up lasagna) are a typical pasta product of Puglia, in particular of the province of Lecce, and a Traditional Agricultural Food Product (PAT) of the region.
They are strips of pasta, similar to tagliatelle, rolled up on themselves.
The lasagne arrotolate are prepared using semolina, water and salt. The mixture is kneaded until soft and elastic. When ready the dough is rolled out using a wooden rolling pin to form a thin sheet.
The sheet is thne cut into strips which are rolled up on themselves.
The lasagne arrotolate can be prepared with a tomato sauce.
