Pomegranate liqueur is a typical of the province of Foggia and a Traditional Agricultural Food Product (PAT) of Puglia region.
The pomegranate is a fruit with a rounded shape with seeds covered with a red juice that gives the liqueur its characteristic pink colour, and a sweet and fruity taste.
The preparation of the pomegranate liqueur is as follow:
Clean a pomegranate collecting only the seeds and discarding all traces of the white peel, let them dry under the sun for a couple of days.
Place them in an airtight glass container and cover with half a litre of alcohol. Allow to rest for seven days.
Prepare the syrup by dissolving on fire 250 grams of sugar in half a litre of water, let it cool down. Put together the alcohol and the syrup and filter it twice.
Allow it to rest for about twenty days and store in glass bottles.
Excellent for after meals.
