Aubergines 'cu llagghia unculu'
This typical Apulian recipe can be prepared in no time. The aubergines are simply stuffed with chopped garlic and parsley, and cooked with extra virgin olive oil. A healthy and simple recipe.
- 3 aubergines
- 6 gloves of garlic
- Extra virgin olive oil
- Wash the aubergines and cut them into slices of 1 cm thick. Make 2-3 deep cuts in each slice and insert chopped garlic and parsley.
- Fry them in hot olive oil until golden brown on both sides.
- Put them on a plate and add some salt.
